Classic rainbow cake is iced/frosted with white buttercream and then sometimes coated with sugarpaste. I am not a sugarpaste type person. I mean I can use it, and sometimes bake cakes coated with it, but when you have a baby pulling out of your leg most days and a three-year-old who wants your attention, it’s nigh impossible to find the time to do it neatly!

Rainbow Cake Recipe

Firstly, I baked the sponge on Tuesday and did the first layer of basic icing on the same day. Essentially it’s a Victoria sponge recipe based on Delia Smith’s classic – the key is how you colour and bake the mixture. To keep it simple, I flavoured every single layer and the frosting vanilla. Trust me, if you’re under pressure for time you will need to keep it simple.

If I had four sandwich tins I would have been able to bake it in half the time it took me – however, I didn’t, I had two. This means that it is easier to split and colour the mixture each time. It’s also easier to ensure you organise your colours, because some lead onto another.

A classic rainbow cake would have seven layers for all the colours, this one has eight – the reason being that every time I baked a batch of sponge, I baked two. It would have been rude not to include the final layer!

This is cake technically serves 20, however you could get more servings out of it because it is a tall cake and each slice could be halved again. The ingredients cost me approximately €17 in total, which means it works out at less than €1 per slice, even if you’re being generous.

Remember: You need to repeat the victoria sponge process 4 times in order to come up with 8 sponge cakes.

You will need the following food colourings for the sponge: yellow, red, blue

Cake Ingredients (repeat x 4):

  • 110g Butter
  • 110g Caster Sugar
  • 110g Plain Flour
  • 2 Medium Free Range Eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Equipment:

  • Mixing Bowl or Stand Mixer
  • Wooden Spoon
  • Weighing Scales
  • 2 Victoria Sandwich Tins (20cm)
  • Baking Parchment (non stick)
  • Scissors
  • Butter & Flour (to grease and dust the tins)
  • Cooling Rack

Method:

  1. Preheat your (fan) oven to 170 degrees celsius. Line the base of your sandwich tins with parchment paper and use the butter and flour to grease the sides, this is very important.
  2. Cut a piece of parchment paper and weigh the flour and baking powder onto it.
  3. Weigh out the butter and sugar together and cream (beat) until light and fluffy.
  4. Add 1 egg and beat until mixed. Add the second egg and beat until well mixed. If it begins to look curdled, add a spoonful of flour. Pour in the vanilla extract and mix.
  5. Pick up the baking parchment and pour the remaining flour into the mixing bowl. Beat until all the ingredients are well combined.
  6. Pour half the cake mixture into the first tin, plain no colouring.
  7. Using the yellow food colouring add 1 teaspoon and stir until your batter turns yellow. Pour the yellow batter into the other sandwich tin.
  8. Bake in the oven for 25 minutes. Note: you slightly need to over-bake these sponges as you need them to hold better when you put them together. It’s easier as this way you don’t need cake dowels.
  9. Remove from the oven and leave to cool for 5 minutes in the tin before tipping upside down and removing the tins and then the baking parchment. Don’t forget to leave the oven on!
  10. Wash and dry your bowl and make another batch of cake mixture. Wash, dry, re-line and re-grease the tins.
  11. For batch two, add 2 teaspoons of red food colouring to all of the batter. Pour half into one of the cake tins. Then add a further 1 teaspoon of yellow food colouring to the remaining batter (this gives you orange) and pour into the second tin.
  12. Repeat steps 8-10 above.
  13. For batch three, add 2 teaspoons of blue food colouring to all of the batter. Pour half into one of the cake tins. Then add a further 1 teaspoon of red food colouring to the remaining batter (this gives you purple) and pour into the second tin.
  14. Repeat steps 8-10 above.
  15. For batch four, add 1 teaspoon each of yellow and blue food colouring to all of the batter (this gives you green). Pour half into one of the cake tins. Then add a further 1 teaspoon of red food colouring on top. You should get a grey colour – if it is quite pale, add another teaspoon each of red, blue and yellow to get it darker.
  16. Repeat steps 8-10 above.

That’s it, the baking part is done. Give yourself a massive pat on the back! Keep your baked cake sections apart from one another by cutting squares of baking parchment and placing between each layer on a plate. Do this before they dry out.

Decorating Your Jelly Bean Rainbow Cake

It’s finally time to assemble and decorate! Please note that this is a generous quantity. You may have some frosting left over, but you can just pop it into a freezer bag and freeze for another day.

Ingredients (you will make this 3 times):

  • 250g Unsalted Butter (or if a block is 254g use that)
  • 500g Icing Sugar
  • 10ml Milk (whole fat or semi-skimmed is okay)
  • 1 teaspoon vanilla extract

Equipment:

  • 1 large bowl (or stand mixer with whisk attachment)
  • 1 wooden spoon
  • 1 spatula or knife for spreading
  • 1 cake-board or cake-stand

Method:

  1. Whisk the butter until light and fluffy, then add the icing sugar a spoon at a time on a low setting until it is completely mixed in.
  2. Use the milk to soften the mixture, if it goes into a breadcrumb consistency.
  3. Add the vanilla extract and whisk for 3 mins.
  4. Spread a spoonful of buttercream on the cake-board or cake-stand before placing your first layer. This will hold the cake in place.
  5. Use the spatula to spread a thin layer of buttercream frosting between each layer of cake. Once you have the layers in place, spread the buttercream around the sides, leaving the top til last. There’s no need for it to be particularly neat as you’ll be hiding most lumps and bumps with the jelly beans.
  6. For the jellybeans, think of building a wall. Each line of jellybeans needs to be slightly offset from the next as this increases the structural integrity.
  7. As it’s buttercream and Victoria sponge, this cake will keep for up to 4 days in a cool dry place.

With a thin biscuit base (I skipped the called-for sugar and just used the butter) and some added chocolate chips to the strawberry ice cream. I also added chopped strawberries to the ice cream and served it with plenty more. This can be kept in the freezer (tightly wrapped) for several weeks, so you can cut a cheeky slice for ice cream emergencies!

How about sending each guest their own Superhero mask as their party invite? Lego.com have a template to use to print those out.

Alternatively you could send out passes to visit the bat cave (aka your party venue) to each guest.

It has to be superhero of course! You could ask each child to come as their favourite character from The Lego Movie or Batman movies, or they could get creative and design their own superhero costume to wear.

    • If you want to go all out you could create your very own Bat Cave to host the party in. Use grey blankets to create the cave effect and create a large computer control centre on cardboard to put along one wall. Add Lego shaped backs to chairs and you could try your hand at creating the Batmobile out of cardboard.
    • Alternatively if you have small numbers coming, you could serve food in the Bat Cave which can be created using a grey tent and decorated with paper bats.
    • For those of us that are less adventurous, use some black card or paper to create bats to hang from every surface in the house. Along with black and yellow balloons and some of the trademark phrases in red and yellow, like the one above.
    • You could also create a fun photo opportunity by setting up Lego Batman and Robin cardboard cutout with holes for little heads to poke through.

For the party food if you have a bat shaped cutter (we found them on Amazon.co.uk and Amazon.com) you could create

    • Bat shaped pizza slices
    • Bat shaped sandwiches
    • Bat shaped biscuits
    • Add some Lego Buns, like the ones below
    • Superhero Noodles
    • Superhero Cookies
    • Red, blue and yellow sweets in jars with the bat symbol
    • Marshmallows dipped in black sprinkles and skewered with red, yellow and blue straws make a good likeness to Batman.
    • The cake can be created using 3 round cakes, getting smaller as they rise. Cover in grey, black and yellow fondant and create Gotham City and include a bat mask. See the image above for inspiration.

  • Pin the Mask on Batman, ideally draw your Lego Batman on cardboard and create some bat masks for the kids to stick as close to his eyes as possible, while they are blindfolded.
  • Get crafty by asking guests to create their own bat masks or make bats from black paper and stick on googly eyes.
  • Freeze Dance, musical statues with a different name!
  • Lego Memory game using a tray with different lego characters on it.
  • Set up a Batman obstacle course challenge.
  • Riddle off; create some riddles for guests to solve and the final answer gives them a clue to where they can find treasure. If you have a large group, split them in 2 and see which team solves the riddles first.
  • Batman and Robin three legged races.

For the Frosting

  • 280g/10 oz butter, softened
  • 560g/20 oz icing sugar
  • 2-3 tbsp milk
  • few drops turquoise food colouring

  • Two 9 x 1-1/2-inch or 8 x 1-1/2-inch cake tins
  • 1 bowl tin
  • 1 Elsa doll
  • Sieve
  • Piping bag

Making the Cakes and Frosting

1. Make up a double batch of Yellow Cake mix, here’s a recipe from Bhg.com

2. Preheat the oven to 190°C / 375°F / Gas Mark 5

3. Divide the cake mix between two round tins and one bowl tin.

4. Bake the 3 cakes, the 2 round ones will take about 20 minutes (or longer depending on your oven) while the bowl cake will need additional time, 45 minutes or until a cake tester comes out clean. Cool the cakes on cooling racks and prepare your frosting.

5. Make a double batch of buttercream icing. Here’s a recipe from the BBC Food website

6. Use one half of the batch for a white underlayer and the second half for the coloured frosting.

7. Divide the second batch into 3 smaller bowls and add different quantities of turquoise food colouring to make 3 different blues.

Assembly and Icing

9. When the cakes are completely cool, cut a hole in the bottom of each cake for the doll to go into. You could use a thin glass to cut around or a round cookie cutter as a guide.

10. Spread a little of the white frosting between the 2 round layers and freeze for 5 minutes to harden.

11. Put the bowl layer upside down on top of the 2 layers then spread a layer of the white frosting batch over the whole of your assembled cake to create the skirt.

12. Ice the skirt with different shades of the blue frosting.

elsa from frozen step 213. If the frosting becomes difficult to work with pop the cake back in the freezer for a minute.

14. Insert the Elsa doll and stick her in the middle hole

15. Use a little more frosting to make a seal between the doll and the cake.

16. Pipe on some white snowflakes. Hint: draw snowflakes on icing with a toothpick then go over with icing piping over the grooves.

Are you looking for kids cake recipes to use up chocolate Easter eggs? This Building Site Chocolate Biscuit Cake is seriously easy and appeals to children’s imaginations. If you can’t use the surplus chocolate straight away, remove all the packaging and freeze the chocolate until you can make this cake.

Makes 16 portions

Building Site Cake - Wholesome Ireland - Food And Parenting BlogIngredients

  • 500g digestive biscuits (or similar)
  • 100g unsalted butter
  • 100ml golden syrup
  • 75g caster sugar
  • 50g cocoa powder
  • 1 packet of jelly tots (or similar)
  • 1 bar of chocolate that you can break into blocks

Method

  1. Take 2 large heavy duty sandwich bags and put one inside the other. Fill the inner bag with the digestive biscuits and channel the anger in your life at the moment batter the bejeepers out of it with a rolling pin or wooden spoon!
  2. Get a big heavy bottomed saucepan, stick it on top of a weighing scales and measure out the butter, golden syrup, caster sugar and cocoa powder directly into the saucepan. Put the saucepan on a medium-low heat on the hob and stir occasionally.
  3. Line a springform cake tin really well with cling film (I used a 21cm tin). Line a baking tray with cling film.
  4. Once the contents of the saucepan have turned to a liquid and the sugar has completely dissolved, pour in the crumbled biscuits. Stir well until they are well coated with the liquid. Take 2/3 of the coated biscuit mixture and press it firmly into the lined cake tin. Cover the top with cling film and leave to cool to room temperature and then stick it in the fridge for about an hour or so.
  5. Take the remaining 1/3 of the biscuit mixture and spread it out on the lined baking tray. Break it apart with a fork.
  6. To assemble the cake. Line a large board or tray. Tip the chilled cake out onto the tray. Sprinkle the biscuit crumbs from the baking tray on top of the cake then jelly tots (buried treasure), build a wall with the chocolate blocks and position the trucks where ever you like.

Mary Kate shared her fabulous Three Little Pigs Cake. Cake can be made using a loaf mixture/ madeira cake.

The ‘brick’ house was chocolate, for the ‘twig’ house we used chocolate fingers and for the ‘straw’ house we used shoelaces.

All the decorations including pigs, paths and houses, came from M&S.

#4. Jellybean Rainbow Cake

Wow! Check out this stunning Jellybean Rainbow Cake from Catriona at Wholesome Ireland.

Essentially it’s a victoria sponge recipe based on Delia’s classic, and the key is how you colour and bake the mixture.

To keep it simple she flavoured every single layer and the frosting vanilla.

You will need time to put this together, but the end result is worth the effort!

#5. Princess Cake

Essentially 2 sponge cakes on top of each other, and decorated with a jelly/cream mixture.
