Rudolph The Reindeer Cookies
This cookie dough can be made in advance and chilled in the fridge until you are ready to bake them. Makes 20-30 cookies depending on size of cutter.
Ingredients:
- 325g plain flour
- 200g unsalted butter softened
- 125g golden caster sugar
- 2 large free range egg yolks
- 1-2 drops of milk (optional)
- 2 tsp vanilla extract
- Chocolate tube icing
- White tube icing
- Red smarties or M&Ms
Method:
- Preheat the oven to 180C / 160C fan / 350F / Gas 4.
- Combine the flour, sugar and butter until the mixture forms fine crumbs. You can do this in a food processor, or alternatively, rub the butter into the flour using your fingers and then mix in the sugar.
- Add the egg yolks and vanilla extract and beat using a wooden spoon until a dough forms. At this stage you may need to add a little milk to help bring the dough together.
- Wrap it in clingfilm and chill in the fridge for half an hour.
- Roll the cookie dough out on a lightly floured surface.
- Use a round cookie cutter to cut out your cookies.
- Line 2-3 baking trays with parchment or baking paper.
- Place your cookies onto baking trays and bake in the oven for 10-15 mins or until lightly golden.
- Allow the cookies to cool on the baking tray for 10 mins before you turn them out into a cooling rack.
- Once your cookies are cool, use a blob of the white icing to stick a red smartie on for Rudolph’s nose, and the chocolate tube icing to paint antlers and dots for eyes.
- Enjoy!
