Stewed Rhubarb (Rhubarb Compote)

Stewed rhubarb is delicious for breakfast, snacks or dessert. I love it over Greek yoghurt with some granola, but it’s also delicious with ice cream….we’re not fussy!

To make your own stewed rhubarb, chop 600g of rhubarb into inch-long pieces and add to a saucepan with 100g caster sugar, and the zest and juice of 1-2 oranges, 2-3 tbsp of water (or more orange juice). Bring to the boil, then leave to simmer on a medium heat for 10 minutes until softened. Once cooled, keep in a sealed container for up to 3 days in the fridge.

This recipe will make 8 Mini Rocky Road Christmas Puddings

Ingredients:

  • 150g (5oz) dark chocolate
  • 50g (2oz) butter
  • 2 heaped tablespoons golden syrup
  • 65g (2 ½ oz) rice cereal (Rice Krispies)
  • 100g (3 ½ oz) digestive or rich tea biscuits crushed

To decorate:

  • 65g (2 ½ oz) white chocolate
  • 6 to 8 large white marshmallows
  • Splash of Milk
  • Cranberries fresh or dried and a mint leaf or green apple skin

Method:

  1. Line 8 muffin tins with cling film. Melt the dark chocolate in a saucepan with the butter and golden syrup.
  2. Once melted stir in the rice cereal and crushed biscuits and mix well until the mixture is combined and well coated.
  3. Divide the mixture equally between the muffin tins, pressing down with the back of a spoon to make sure each pudding is well packed. Chill for at least an hour until firm.
  4. Once chilled, carefully pull each pudding from the tin, unwrap and place rounded side up on a wire rack.
  5. To decorate, add your marshmallows and white chocolate along with a splash of milk to a small saucepan and heat gently to melt. Remove from heat and cool for 1 minute.
  6. Add a heaped spoon of the white chocolate and marshmallow mix to each pudding so it runs down the sides and resembles custard on a traditional plum pudding. Leave to cool and add your dried or fresh cranberries and your mint leaves, or green apple peel, to resemble holly.
  7. Serve and enjoy!

TIP: Cut down on the rice krispies and biscuits and replace with dried fruit and nuts for a more Christmas flavour.

Rudolph The Reindeer Cookies

This cookie dough can be made in advance and chilled in the fridge until you are ready to bake them. Makes 20-30 cookies depending on size of cutter.

Ingredients:

  • 325g plain flour
  • 200g unsalted butter softened
  • 125g golden caster sugar
  • 2 large free range egg yolks
  • 1-2 drops of milk (optional)
  • 2 tsp vanilla extract
  • Chocolate tube icing
  • White tube icing
  • Red smarties or M&Ms

Method:

  1. Preheat the oven to 180C / 160C fan / 350F / Gas 4.
  2. Combine the flour, sugar and butter until the mixture forms fine crumbs. You can do this in a food processor, or alternatively, rub the butter into the flour using your fingers and then mix in the sugar.
  3. Add the egg yolks and vanilla extract and beat using a wooden spoon until a dough forms. At this stage you may need to add a little milk to help bring the dough together.
  4. Wrap it in clingfilm and chill in the fridge for half an hour.
  5. Roll the cookie dough out on a lightly floured surface.
  6. Use a round cookie cutter to cut out your cookies.
  7. Line 2-3 baking trays with parchment or baking paper.
  8. Place your cookies onto baking trays and bake in the oven for 10-15 mins or until lightly golden.
  9. Allow the cookies to cool on the baking tray for 10 mins before you turn them out into a cooling rack.
  10. Once your cookies are cool, use a blob of the white icing to stick a red smartie on for Rudolph’s nose, and the chocolate tube icing to paint antlers and dots for eyes.
  11. Enjoy!

Lili’s Crispy Caramel Squares

Makes 12

Ingredients:

For the base:

  • 100g crisped rice cereal
  • 50g butter
  • 400g milk chocolate

For the caramel layer:

  • 1 x 397g tin condensed milk
  • 75g butter
  • 100g brown sugar
  • 1 tbsp golden syrup

For the topping:

  • 300g milk chocolate
  • 100ml cream

Method:

  1. Grease and line a 9 inch/23cm square tin.
  2. To make the base, place the crisped rice in a large bowl.
  3. Place the chocolate and butter together in another bowl. Microwave for 1 minute, stir, then continue to microwave for 30 seconds at a time, stirring after each burst, until melted.
  4. Add the melted chocolate to the crisped rice and stir.
  5. Spoon the mix into the lined tin, press down into an even layer and refrigerate.
  6. To make the caramel layer, place the condensed milk, butter, sugar and golden syrup in a saucepan.
  7. Heat on medium, stirring constantly, until bubbling – do not heat on high, as it will burn. Reduce the heat and simmer for around 10 minutes, until it reduces and darkens a bit.
  8. Pour the mix over the chilled crisped rice, smooth it out, and stick it in the freezer for 20 minutes.
  9. For the topping, add the cream to the chocolate and microwave in short bursts until the chocolate has melted. Stir well to combine.
  10. Pour the topping over the caramel layer, and replace in the fridge for at least an hour.
  11. When set, remove from the tin, trim the edges and cut into squares.
  12. They keep for 3–4 days in an airtight container.
