Perfect for lunchboxes, breakfast or really at any time of day, these mini soda bread rolls are easy to make and a great size for kids. Better yet, they freeze well so you can always have some on hand. Lili Forberg shares her soda bread rolls recipe from her new book Lili’s Family Favourites, so you can bake a batch at home.
Lili says “these happened by accident one morning when we had no bread for brekkie, and I had to think what I could make in super-quick time. They take 20 minutes all in and are so easy and delicious!”
Lili’s Mini Soda Bread Rolls
Makes 12
Ingredients:
- 270g oats
- 120g (1 cup) wholemeal flour
- 2 tsp bicarbonate of soda
- 1 egg
- 480g (2 cups) natural yogurt
- 3 tbsp mixed seeds – I used pumpkin and sunflower, but any seeds you have will work
- 2 tsp honey
- 1 tsp salt
Method:
- Preheat the oven to 200C/180C fan/gas mark 6. Line a tray with baking paper.
- Mix all the ingredients together.
- Portion the mixture onto the lined tray using an ice-cream scoop (or a spoon if you don’t have one).
- Bake for about 16 minutes, until golden brown.
- Remove to a rack to cool.
- The rolls keep for 2-3 days in an airtight container, and they freeze well too.
