Some days you just want something that can be done in a matter of minutes – and that’s where these chorizo and chicken quesadillas are the perfect solution! Not only are they quick and easy to prepare (it’s really just an assembly job), you can also make them with whatever is in the fridge.

No chorizo? No problem! Swap in bacon or just leave it at chicken and veggies. The gooey melted cheese brings it all together and makes these quesadillas a great lunch or dinner choice. Serve with a salad, wedges, fries or a bowl of soup for a more hearty meal.

Chorizo and Chicken Quesadillas

Ingredients:

  • 100g chorizo, diced
  • 4 soft tortilla wraps
  • Leftover chicken, shredded
  • 1 red pepper, cut into strips
  • Grated cheddar and/or mozzarella
  • 100g sweetcorn
  • Rocket and cherry tomatoes, to serve

Method:

  1. In a small pan, sauté the chorizo for 3-4 minutes. Drain and remove to a plate.
  2. Put a large pan or griddle pan on over a medium heat
  3. Now it’s time to create your quesadillas. Lay a tortilla wrap on a chopping board and combine a mix of chicken, chorizo, pepper strips, corn and cheese to one half of the wrap.
  4. Fold the other half over, and use a spatula to carefully lift the quesadilla into the pan. Cook on each side for several minutes, pressing down with the spatula to keep the quesadilla flat.
  5. Cut into thirds and serve.

Are you struggling to reduce treats in your home? You are not alone, new research shows that a fifth of calorie intake for 2-4 year olds is treat food like biscuits, chocolate, soft drinks and savoury snacks. This rises to a quarter of calorie intake for primary school children. The research also found that children are getting treats instead of healthy snacks during the day.

To help, we have teamed up with the START campaign, to give you some satisfying healthy snack ideas to keep your kids full of energy throughout the day. START is a public health campaign from safefood, Departments of Health in Ireland and Northern Ireland, Healthy Ireland, the HSE and the public health agency.

Healthy Snack Ideas and Tips for Kids

What Kind of Snack is Required?

Children should eat between 2 and 3 snacks a day to help keep energy levels up. Offering healthy snacks is important, not only nutritionally but also to help your children as they grow.

Kids look for snacks for a variety of reasons so here’s some things to consider before deciding what to offer them:

  • Length of time to their next meal and length of time since their last meal
  • They may actually be thirsty so is a drink of milk or water what they need?
  • Will a light snack like a piece of fruit keep them satisfied until mealtime?
  • If they are hungry after school or physical activity, you may need to give them a more filling snack

Healthy ‘go to’ Snack ideas

Having a range of healthy snacks to offer when hunger strikes is the best way to ensure you are offering good choices. So next time you go shopping, include these in your basket so you are not caught out when the kids proclaim they are starving!

Kids love to get dipping, so if you’re on the hunt for a healthy snack to tuck into, this pea and mint dip is a winner. Using frozen peas means that it’s quick, easy and budget-friendly, plus it makes a tasty change from the usual options.

Breadsticks, chopped vegetables, crackers, toasted pitta triangles, or tortilla chips will all work for that all-important scooping!

Derval O’Rourke’s Pea and Mint Dip

Green Isle has teamed up with ambassador Derval O’Rourke and put together a range of summer inspired recipes that are full of goodness for all the family to enjoy – including the little ones!

Serves 4 as a snack

Ingredients:

  • ½ bag of Green Isle frozen peas
  • Handful of fresh mint leaves
  • Zest and juice of 1 lemon
  • 2 garlic cloves
  • 3 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon tahini
  • Coarse salt and pepper

Method:

  1. Cook peas in salted boiling water until tender, 1 minute. Set aside to cool.
  2. Pulse peas in a food processor with mint, lemon zest and juice, garlic, 2 tablespoons olive oil, and tahini.
  3. Season with salt and pepper; drizzle with oil. Serve with veggie batons and crackers.

I usually make these chicken and sweetcorn potato cakes for my children when they get in from school, it makes a change from sandwiches and keeps them going until dinner-time.

I often chop up the leftover roast potatoes from the Sunday roast instead of grating raw potatoes, and this works just as well.

Chicken and Sweetcorn Potato Cakes

Makes 12 potato cakes

Ingredients:

  • 200ml milk
  • 2 eggs
  • 75g flour
  • 450g potatoes, peeled and grated
  • 225g onion thinly sliced
  • 225g cooked chicken, finely chopped
  • Small can of sweetcorn, drained
  • 1 tbsp chives, chopped
  • Salt and pepper
  • Butter and vegetable oil for frying

Method:

  1. Sieve the flour into a bowl, make a well in the centre and drop in the eggs.
  2. Using a whisk gradually pour in the milk whisking all the time until combined and smooth, set aside.
  3. Blanch the onion and grated potato in a pot of boiling salted water for 2 minutes, drain and squeeze out as much water as you can from the potato and onions.
  4. Stir the chicken, sweetcorn, chives, and the potato and onion mixture into the batter, stir to combine and season with salt and pepper.
  5. Heat a tablespoon of butter and oil together in a frying pan, once hot drop in spoonfuls of the batter, flatten and cook on each side for 4 minutes. Drain on kitchen paper and serve hot.
  6. To make a dressing for the pancakes combine natural yogurt with lime juice and drizzle over the pancakes.

Pumpkin Scones Recipe

Serves 6

Ingredients:

  • 2 1/2 cups flour
  • 1/4 cup brown sugar
  • 1 tbsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter (1/2 lb)cut into chunks
  • 3/4 cup pumpkin puree
  • 1/2 cup milk
  • 1 tbsp sugar

Method:

  1. Preheat oven to 200C.
  2. Mix flour, sugar, baking powder, cinnamon and salt in a large bowl.
  3. Add butter cubes and rub between your fingers until it starts to resemble bread crumbs.
  4. In another bowl, gently mix the milk and pumpkin puree. Slowly add to the dry mix and bring together to form a dough.
  5. Lightly flour and knead dough, then flatten and cut into triangles (or you could use a cutter for round scones).
  6. Sprinkle with a little sugar, then bake for 20 mins or until skewers clean.
  7. Remove to a wire rack and leave to cool.

Baked Berry Squares Recipe

Makes 12

Ingredients:

  • 235g Flahavan’s Super Oats
  • 2 eggs
  • 120g apple compote
  • 240mls skimmed milk
  • 15g ground flaxseed
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 90g blueberries
  • 40g brown sugar

Method:

  1. Preheat oven to 175°C
  2. Mix Flahavan’s Super Oats, eggs, blueberries, apple sauce, brown sugar, skimmed milk, flax seed, baking powder, cinnamon, vanilla, and salt together in a large bowl; pour into a 9×13-inch baking dish.
  3. Bake in preheated oven until the moisture is absorbed and the oats are tender, 25 to 30 minutes.
  4. Cut portions into 12 equal portions.
