Baked Berry Squares Recipe

Makes 12

Ingredients:

  • 235g Flahavan’s Super Oats
  • 2 eggs
  • 120g apple compote
  • 240mls skimmed milk
  • 15g ground flaxseed
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 90g blueberries
  • 40g brown sugar

Method:

  1. Preheat oven to 175°C
  2. Mix Flahavan’s Super Oats, eggs, blueberries, apple sauce, brown sugar, skimmed milk, flax seed, baking powder, cinnamon, vanilla, and salt together in a large bowl; pour into a 9×13-inch baking dish.
  3. Bake in preheated oven until the moisture is absorbed and the oats are tender, 25 to 30 minutes.
  4. Cut portions into 12 equal portions.

  • 60g beetroot

  • 1 tbsp lemon juice

Are you looking for a healthy snack idea that tastes great? How about one that even gets some superfoods into your child? We love this easy superfood flapjack recipe that is delicious, filling and sure to be enjoyed by kids!

Flapjacks always remind me of cooking with my mother when I was a child, and I really love this recipe for how authentic it is.

The addition of mixed dried fruits and various seeds, along with the oats, means that they are essentially a power bar. If you’re stuck on a busy morning, they are just as nourishing as a bowl of cereal, or alternatively are a good after-school boost before settling down to homework.

Superfood Flapjack Recipe

Makes approx 24

Ingredients:

  • 250g porridge oats
  • 125g butter
  • 125g brown sugar
  • 3 tablespoons of golden syrup or honey
  • 150g mixed dried fruit
  • 50g sunflower and pumpkin seeds
  • 1 pinch of salt

Stuck for Family Dinner Ideas Try Our Free 14 Day Dinner Plan

Method:

  1. Preheat your oven to 180C.
  2. Melt the butter in a large non stick saucepan over a very low heat.
  3. Add the sugar and honey/syrup and mix well.
  4. Stir in the oats and a pinch of salt.
  5. Stir in the mixed fruit and seeds
  6. Spread the mixture over a sheet of baking paper on a baking tray and press flat.
  7. Place in the oven and cook for 15 mins or until it turns golden brown.
  8. While the mixture is hot from the oven trace the lines up and down the mixture so that you can easily break up the flapjacks when it cools

These bitesize muffins are delicious and suited to so much more than just breakfast. Perfect for after school snacks, coffee mornings, lunchbox treats or as a weekend baking session. The whole family will love these breakfast berry muffins and they are sure to be a hit!

A Brilliant Breakfast Berry Muffins Recipe

These berry muffins are great for lunchboxes and keep very well in a sealed tin. They also freeze excellently, so if you have a baking day and make loads wait until they are cold then place in a freezer tub or bag. Remove the muffins from the freezer the night before you put them in a lunchbox.

Makes 12 muffins

Ingredients:

  • 260g plain flour
  • 200ml milk (half fat works fine but makes the muffins slightly drier so I use full fat)
  • 150g frozen or fresh mixed berries (blueberries on their own work very well with this recipe too)
  • 100g caster sugar
  • 75ml sunflower oil
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon of salt
  • To decorate the top you will need 2 tablespoons each of light brown sugar and flaked/rolled oats

Method:

  1. Preheat your oven to 170C and line your muffin tray with the 12 cases.
  2. Weigh all the dry ingredients (flour, sugar, baking powder & salt) directly into a large bowl.
  3. In a separate bowl or jug, mix together the oil, milk and egg and mix well.
  4. Pour the wet mixture into the dry mixture and mix well with a spoon until you have a batter with no lumps. You can use an electric mixer for this if you prefer.
  5. Once your batter is made, pour in your berries, making sure each is coated with the batter.
  6. Spoon into each muffin case, sharing the mixture equally between each.
  7. Sprinkle the top with a light dusting of brown sugar and some flaked oats (optional).
  8. Bake in the oven for 35 minutes or until golden on top.
  9. Leave to cool a little on a wire rack before serving.

Apple and Blueberry Porridge

Ingredients:

  • 30g / 1 oz porridge oats
  • 1 tbsp blueberries
  • 1 apple
  • 180ml / 6 fl oz milk of choice
  • Pinch of cinnamon

Method:

  1. Core and dice the apple and put in a saucepan with a splash of water on a low heat.
  2. Cover with a lid and cook for 10 minutes or until the apple is soft.
  3. Puree the apple in a blender.
  4. Put the milk in a saucepan on a medium heat and bring to a simmer.
  5. Add the porridge oats and cook for 2 mins or until it’s got a thick and creamy consistency. Take off the heat.
  6. Add the apple puree, a pinch of cinnamon and mix well.
  7. Fold in the blueberries while the porridge is still warm and mix.
  8. Serve on a cute plate and enjoy!

We all want to pack our growing kids full of vitamins and nutrients. Often, we have the best of intentions when whipping up healthy snacks, only for it to fall short when our kids refuse to even try it. That’s why our green smoothie recipe is kid-friendly in taste but nutritionally dense.

If your family prefers a thicker consistency when it comes to smoothies, you can swap the bananas for frozen ones. Just make sure the frozen bananas are sliced so you don’t break or damage your blender. This smoothie is ideal all year round – we love it in the morning or with lunch on busy days to keep going through the afternoon.

The hemp seeds in this recipe are a great source of plant protein and the dates are full of fibre and vitamins such as iron, potassium and B vitamins. They will be well on their way to their five-a-day with this smoothie!

Green Smoothie for Growing Kids

Ingredients

  • 2 ripe bananas
  • 2 pitted dates
  • 1 cup water
  • 1/3 cup of frozen raspberries
  • 1/3 cup of frozen pineapple
  • 2 cups of spinach
  • A pinch of spirulina powder
  • 2 tsp of hemp seeds

Method

  • Pop the bananas, dates, water and frozen fruit in a blender.
  • Blend until smooth.
  • Toss in your spinach and a pinch of spirulina powder.
  • Blend and watch your smoothie turn green!
  • Serve it up, topped with hemp seeds and get ready to embrace some green smoothie moustaches.
