With just a few essentials from your store cupboard you can have these 11 festive canapés on the table in no time.

  1. Cheese, Olives and carrots make great festive penguins.
  2. Cucumber, carrot and a cracker make a festive tree canapé.
  3. Cream cheese & Oreos Truffles dipped in chocolate make the perfect sweet festive canapé and can be made ahead of time and frozen.
  4. Fresh figs quartered and wrapped in parma or prosciutto ham with a little crumble of blue cheese.
  5. A layer of nachos, drizzled with salsa, jalapeño peppers and grated cheddar repeated 3 times in an oven proof dish and baked until the cheese melts will wow guests. Serve with some sour cream or natural yoghurt for dipping.
  6. Whisk together smoked mackerel, crème fraîche, a squeeze of lemon juice with some capers for a quick and tasty fish dip. Serve with vegetable cruidites, crackers or bake off some bread rolls from the freezer.

A good festive drink for adults is a hot port. Made in minutes using a lemon, cloves, honey and port. You simply warm your glasses and add a measure (or two!) of port, add a spoon of honey, or brown sugar, top up with boiled water and add a lemon slice studded with cloves. 4. Sunday Roast

Sunday roast is a weekly favourite of ours – slow cooked. Leave it on low, for hours, and enjoy the mouthwatering smells wafting through the house all day. Finish off pork and chicken in the oven on a high temperature for 10 minutes to brown the chicken or crisp the pork fat.

  • Just add an inch or so of water with the meat, plus a couple of onions and carrots too to flavour the juices.
  • Season the meat and add whichever fresh herbs will suit the meat – mint or rosemary with lamb, thyme with chicken etc.
  • Use a meat thermometer to check when the meat is cooked though you’ll soon know how long it takes depending on the meat and size of it.
  • Once your meat is cooked you can leave it to rest and make the gravy from the juices left over – either in the slow cooker if you have time, or just transfer the juices to a pan on the hob and finish off your gravy quickly with cornflour or whatever you would normally use.

5. Pork Cutlets with Apple & Parsnip

This pork cutlets recipe on Taste.com.au takes 4.5 hours to slow cook and feeds 4 people. The slow cooking leaves the pork cutlets very tender and the meat will drop off the bone, perfect for the younger ones.

With only 15 minutes to prepare it’s perfect for lunch or supper.

6. Crock Pot Lasagna

Yes a lasagne can be done in a slow cooker. This recipe from Food.com follows the usual way to cook a lasagne in the oven, with the browning of the meat and onions plus the layering of pasta and sauces.

However, as it is layered in the slow cooker you can leave it for 4 to 5 hours while you have other things to do. This serves 4-6 people and is only 15 minutes to prep.

7. Lamb with Olives and Potatoes

This slow cooker recipe for lamb from Martha Stewart feeds 4 and is perfect for Sunday lunch with a 40 minute preparation time and 4.5 hours in the slow cooker.

Lamb is the perfect meat for a slow cooker as the slower it’s cooked the more tender it becomes. You can ask your butcher to cut the shank especially to fit into a slow cooker if needed. Leave the olives out if they aren’t a favourite of the kids.

#8. Homemade Goat’s Cheese Pesto with Pasta

This is a firm favourite in my house so I decided to include it in our round up. We use wholewheat spaghetti but you can use whatever pasta your kids love.

Serves 4

Cooking time 20mins

Ingredients:

  • 300g spaghetti
  • 100g pack of Energise Super Mix (or for traditional pesto use 80g basil or 75g rocket)
  • 2 cloves garlic
  • 40g pine nuts toasted (or you could use walnuts, hazelnuts or almonds)
  • Zest and juice of a small unwaxed lemon
  • 80ml olive oil
  • 100g soft goats cheese

Method

  • Cook spaghetti according to instructions
  • While it is cooking combine the leaves, nuts, garlic, lemon juice and 40g of goats cheese in a blender. Once blended, add oil and blend again until smooth.
  • Drain spaghetti, retaining half a cup of the the cooking water
  • Once drained, return spaghetti to pan and pour over the pesto. Stir to coat and add cooking water a tablespoon at a time if required.
  • Taste and season with salt and pepper if required
  • Serve topped with lemon zest and the remaining goats cheese crumbled over the top.

My unicorn-mad daughter spied a recipe for unicorn ice cream recently and has not stopped talking about it since! In a moment of weakness, I said we would plan an ice cream party over the summer with some fun ice cream flavours, lots of toppings and invite over a few friends – needless to say, we had to pick a date and time immediately, people were invited and there was no backing out!

Unicorn ice cream will have top billing on the day, so I’ve been practicing (all in the name of research…) to get it just right. While a little sparkle and plenty of swirling colours are the main priorities, I also want it to taste good!

We have finally tweaked and tasted enough to determine this unicorn ice cream recipe is our go-to from now on. It’s incredibly easy, with no ice cream maker required, so why not whip up a batch?

How to Make Unicorn Ice Cream

Unicorn ice cream - Mykidstime

Serves 8-10

Ingredients

  • 397g tin of condensed milk
  • 2 tsp vanilla extract
  • 600mls double or whipping cream
  • 3-5 gel colours (2-3 drops of each)
  • Mini marshmallows
  • White chocolate chips or chunks
  • Edible glitter (optional)
  • Sprinkles in a mix of colours and shapes

Method

  1. First, get your equipment ready. Line loaf tins with clingfilm, or use other freezable containers to store your ice cream.
  2. Pour the condensed milk and vanilla into a large bowl.
  3. Whip the cream to soft peaks, then fold into the condensed milk until all combined, taking care not to knock all the air out of the cream.
  4. Divide the mixture evenly into several smaller bowls (one for each colour you are using).
  5. Add 2-3 drops of your first colour into the first bowl, then repeat with each colour (one colour per bowl).
  6. Alternate scoops of each colour into the tin/container, and scatter in a few marshmallows, sprinkles, glitter and choc chips between the layers.
  7. Use a knife or skewer to swirl the colours together gently (you don’t want the colours to get too ‘muddy’).
  8. Top the finished container with more sprinkles and treats, then cover and freeze overnight before serving.

That’s it – it’s so simple!

My kids always love ice lollies, they love making them and eating them! Invest in a set of ice lolly or popsicle moulds so you can refill to make new ones regularly. Then you can try different recipes and different combinations. You can use pure fruit with fruit juice or make them with yoghurt for a different texture and flavour.

Most of these recipes are easier made with moulds but if you don’t have one you could improvise and use paper cups and wooden sticks.

We Love These Healthy Frozen Treats!

Mango, Lime & Orange Ice Lollies

Makes 6 lollies

Ingredients

  • 2 oranges
  • 1 lime
  • 1 x 275g pack frozen mango chunks

Method

  1. Squeeze the juice from the oranges and the lime.
  2. Put the juice and the mango chunks into a food processor and pulse until almost smooth.
  3. Pour into the lolly moulds and freeze for 6 hours.

Passion Fruit and Yogurt Lollies

These passion fruit and yogurt lollies are tangy and creamy.

Ingredients

  • 400ml Greek yogurt
  • 2½ tbsp honey
  • 5 passion fruit

Method

  1. Dilute honey in 1 tablespoon hot water.
  2. Mix the honey and water with the yogurt.
  3. Scrape out all of the passion fruit pulp and seeds into a jug.
  4. Add a large spoonful of the yogurt mixture into each lolly mould, then pour a layer of passion fruit over the yogurt. Repeat in layers until the mould is full.
  5. Add the sticks or mould lids and freeze overnight.

Summer Fruit Lollies

The great thing about these fruit lollies is you can use whatever you have at hand in the way of summer fruits.

Makes 4 fruit lollies

Ingredients

  • 200g Greek yogurt
  • 100ml milk
  • 2 tbsp clear honey
  • 100g of your favourite summer fruits – kiwi, strawberries, cherries or blueberries

Method

  1. Combine the yogurt, milk and honey in a mixing bowl.
  2. Finely dice the fruit and stir into the yogurt mix.
  3. Divide between your moulds or paper cups. Place a handle or stick into each of the lollies.
  4. Freeze overnight.
  5. To remove the popsicles, warm the moulds with the heat of your hands for 10-20 seconds until the outside of the popsicles melt a little.

Chocolate Covered Kiwi Lollies

This is a super quick snack using fresh fruit and chocolate.

Makes 12 kiwi lollies

Ingredients

  • 6 kiwi fruit
  • 100g dark chocolate
  • 12 wooden ice lolly sticks

Method

  1. Peel the kiwis and take two thick slices from each – you can use the leftover kiwi tossed in some yoghurt for breakfast.
  2. Place a wooden lollipop stick into the side of each of the kiwi fruit rounds. Place these on some greaseproof paper and put them into the freezer until frozen.
  3. When the kiwi pops are frozen break up the chocolate and place into an oven proof bowl over a pan of boiling water to melt, making sure the bottom of the bowl doesn’t touch the water.
  4. Dip each kiwi pop in the melted chocolate and put straight back into the freezer to harden before serving.

Mango & Mint Frozen Yoghurt

This is a really delicious simple frozen yoghurt to make.

Ingredients

  • 2 x 400g packs frozen mango chunks
  • 500g Greek yogurt
  • 10g fresh mint

Method

  1. Chop the mint.
  2. Put all the ingredients into a food processor and blend until smooth.
  3. Pour the purée into a freezer-proof bowl or tub.
  4. Freeze for about 80 minutes until semi-hard and serve.
  5. If it’s been in the freezer for a long time, allow it to thaw for 15 minutes before serving.

Tasty BBQ Recipes

Tangy Citrus Chicken, Fish or Cauliflower

The secret to this recipe is the marinade. It can be used with either chicken drumsticks, wings, breast or thighs or you could use it to marinade fish like a cod loin, a salmon darne or monkfish tail too. It is equally good with cauliflower cut into steaks.

Ingredients

  • Zest and juice of a large orange
  • Zest and juice of half a lime
  • 4 pieces of chicken, fish or cauliflower steaks
  • 1 clove of garlic, crushed
  • 1 inch of fresh ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon of vegetable oil (an extra tablespoon of oil should be used for cauliflower)
  • Ground black pepper
  • Chilli flakes if you like some spice

Method

  1. Mix together all the marinade ingredients in a large bowl
  2. Add your chicken/fish/cauliflower
  3. Cover with cling film and leave in the fridge for at least an hour to marinate (chicken and cauliflower can be left overnight but fish should be removed after an hour as the citrus juice will soften the fish too much.
  4. Remove from the marinade and cook on a hot BBQ for 20 to 25 mins.
  5. Check it is cooked through before serving .

Pork and Avocado Burgers

I wanted an alternative to minced beef for burgers and found a recipe for chicken avocado burgers which I have adapted and used with minced pork instead. I find the pork stays more moist than the chicken. I like to add a slice of pickled beetroot to mine for serving! I think this recipe would also work well with minced lamb too.

Ingredients – Serves 4

  • 500kg/1lbs minced pork
  • 1 green apple grated
  • 1 avocado chopped into bite size chunks
  • Juice of half a lemon
  • 1 clove garlic crushed
  • 1 teaspoon chilli flakes (optional)
  • 1 handful breadcrumbs (2 slices bread)
  • Salt and Pepper
  • Toasted Bun
  • Mayonnaise/natural yoghurt/sour cream/apple sauce for serving

Method

  1. Mix all the ingredients (except those for serving) into a large bowl
  2. Form into 4 large patties (or 6 to 8 smaller ones)
  3. Place in the fridge until you are ready to cook
  4. Cook for 10 to 15 mins, turning once on your BBQ or grill
  5. Serve in a toasted bun with a sauce of your choice

Potato Boats

Recipes for cooking outdoors

Baked potatoes are a staple for any outdoor cooking. You can bake them on the BBQ or in the oven beforehand and finish them on the BBQ. This potato boat recipe is a fun, alternative way of serving up regular baked spuds.

Ingredients

  • Baked potatoes (one for everyone and few spares!)
  • Your favourite cheese, camembert, brie, goats, cheddar, stilton, or gruyere all work well
  • Sliced ham, experiment with different types or you could use crispy bacon
  • Olives
  • Sour cream
  • Spring onions

Method

  1. Bake the potatoes
  2. Cut horizontally into each potato at one inch intervals to create pockets
  3. Stuff with cheese, ham, bacon or olives into each cut
  4. Wrap the potato in tinfoil and return to the grill so the cheese melts
  5. Once melted smother in sour cream and sprinkle with chopped spring onions and serve

S’Mores Dip

Rather than making individual s’mores next time you are cooking outdoors try this s’mores dip as an alternative.

Ingredients

  • 250g (small packet) mini marshmallows
  • 150g cream cheese
  • 2 large tablespoons chocolate spread or 2 small packets (75kg) milk/white/dark chocolate chips
  • Foil
  • Biscuits (your favourites!)
  • Fresh fruit for dipping (strawberries or bananas work well)

Method

  1. Mix the marshmallows, cream cheese and chocolate in a bowl
  2. Make a foil parcel and add the mixture to it
  3. Ensure it is well sealed and place onto the BBQ or grill
  4. Wait for 5 mins until the mixture has heated and combined
  5. Open the parcel and let everyone dip their choice of biscuit or fruit!

Ingredients:

  • 100g chorizo, diced
  • 4 soft tortilla wraps
  • Leftover chicken, shredded
  • 1 red pepper, cut into strips
  • Grated cheddar and/or mozzarella
  • 100g sweetcorn
  • Rocket and cherry tomatoes, to serve

Method:

  1. In a small pan, sauté the chorizo for 3-4 minutes. Drain and remove to a plate.
  2. Put a large pan or griddle pan on over a medium heat
  3. Now it’s time to create your quesadillas. Lay a tortilla wrap on a chopping board and combine a mix of chicken, chorizo, pepper strips, corn and cheese to one half of the wrap.
  4. Fold the other half over, and use a spatula to carefully lift the quesadilla into the pan. Cook on each side for several minutes, pressing down with the spatula to keep the quesadilla flat.
  5. Cut into thirds and serve.

Try Some New BBQ Recipes

Salmon Fillet Topped with Curried Cream Cheese & Prawns

This deliciously simple recipe is the perfect recipe to kick off BBQ season and makes a great alternative to burgers.

Serves 4

Ingredients:

  • 4 pieces of salmon fillet; skin on (can be whole fillet if cooking for more guests)
  • 200g Philadelphia cream cheese
  • 300g defrosted and drained cooked prawns
  • Mild curry powder
  • 2 tbsp olive oil

Method:

  1. Place the salmon into a bowl and sprinkle over a little olive oil, mix well and place the fish into a baking dish skin down.
  2. Take the cream cheese, prawns and curry powder (to taste) and mix well.
  3. Top onto the salmon and then take some tin foil and cover the dish. Refrigerate until needed.
  4. When ready, take the baking dish and place it onto one of your BBQ grills towards the back for approximately 10-20 minutes, depending on the size of the salmon and the heat of your BBQ.

Calor Top Tip: Be careful when you are removing the tinfoil from the salmon, as this will be hot!

Rosemary-Infused New Potatoes

Ingredients:

  • 500gm of washed and halved new potatoes
  • Milled sea salt & black pepper
  • 1/4 tsp of Cajun spice
  • 1 stick of rosemary, leaves stripped
  • 2-3 tbsp rapeseed or olive oil

Method:

  1. Place all of the ingredients into a bowl and mix well.
  2. Take approximately 8in x 8in inch pieces of square tin foil
  3. Place portions of the potatoes into the middle of the foil and scrunch up into parcels.
  4. When ready, place the parcels onto the BBQ, they will take approximately 10 mins.
  5. When cooked, bring to the front of the BBQ until ready to serve.

Stewed rhubarb is delicious for breakfast, snacks or dessert. I love it over Greek yoghurt with some granola, but it’s also delicious with ice cream….we’re not fussy!

To make your own stewed rhubarb, chop 600g of rhubarb into inch-long pieces and add to a saucepan with 100g caster sugar, and the zest and juice of 1-2 oranges, 2-3 tbsp of water (or more orange juice). Bring to the boil, then leave to simmer on a medium heat for 10 minutes until softened. Once cooled, keep in a sealed container for up to 3 days in the fridge.
